    1 regular size package Eckrich® Smoked Sausage
    1 tablespoon vegetable oil
    1 package (8 ounce) Spanish-style yellow rice mix
    2-1/4 cups water
    1 cup green peas
    2 jarred roasted red peppers, chopped (about 1/3 cup)
    ½ cup sliced stuffed green olives
    2 green onions, sliced
    ¼ to ½ teaspoon crushed red pepper flakes
    • Cut sausage into ¾? thick slices.
    • Heat oil in a 4-quart pan over medium heat.
    • Cook sausage until browned, about 8 minutes.
    • Stir in rice mix and water.
    • Cover pan, bring to a boil. Reduce heat to a simmer; cook 20 minutes or until water is almost absorbed.
    • Stir in peas, roasted red peppers, olives, onions and pepper flakes.
    • Cover and cook until rice is tender, about 5 more minutes.
