    1 pound Eckrich Smoked Sausage chopped in small pieces
    1 cup Chihuahua cheese grated or any other type of quesadilla cheese
    1 4 oz can green chilies well drained
    8 flour tortillas
    1 cup of salsa
    • Heat the smoked sausage in a dry skillet set over médium heat for about one minute
    • Divide the chopped sausage among the 8 tortillas
    • Top the sausage on each tortilla with cheese and the chilies
    • Fold the tortilla to make a quesadilla
    • Spray large skillet with vegetable spray and heat
    • Brown each side of the quesadilla until golden brown
    • Top with salsa
