    1 regular size package Eckrich® Smoked Sausage
    1/2 cup sour cream, preferably Mexican sour cream
    4 bolillos (Mexican sandwich rolls) or 6-inch French rolls, split
    3/4 cup refried pinto beans, heated
    4 slices cheddar cheese, cut diagonally in half
    2 ripe avocados, peeled, seeded, sliced
    Salsa, pickled jalapeno peppers or pickled onions, as desired
    1. Cut each sausage link in half crosswise. Cut each piece of sausage in half lengthwise almost through to opposite side; open like a book. Heat in a large dry skillet over medium-low heat until browned and heated through, 4 to 5 minutes, turning once.
    2. Spread sour cream over cut sides of rolls. Spread refried beans over bottom of rolls; top with sausage, cheese and avocado. Garnish with salsa, peppers or onions as desired; close sandwiches.
