Spicy Pinto Beans and Smoked Sausage (Frijoles Charros)

    1 regular size package Eckrich® Smoked Sausage, cut into 3/4-inch slices, slices halved
    2 tablespoons oil
    1 medium onion, chopped
    1 chipotle chili in adobo sauce (from a can), finely chopped
    1 teaspoon adobo sauce from can (optional)
    2 (15 ounce) cans pinto beans
    1/2 cup crisply cooked crumbled bacon or packaged bacon bits
    Shredded Chihuahua cheese, chopped cilantro (optional)
    1. Heat oil in a large saucepan over medium heat.
    2. Add onion; cook and stir 2 minutes.
    3. Add chili and, if desired, adobo sauce; cook and stir 1 minute.
    4. Add sausage; cook and stir 5 minutes.
    5. Drain one can of the beans.
    6. Add drained and undrained beans to onion mixture; simmer over medium-low heat 10 minutes or until heated through and sauce thickens.
    7. Stir in bacon bits. Garnish with cheese and cilantro if desired.
