BBQ Franks with Beans and Corn Bread

  • 1 regular size package Eckrich® All Beef Franks, cut into 1/2-inch-thick slices
  • 1 medium red bell pepper, chopped (about 3/4 cup)
  • 2 green onions, sliced (about 1/4 cup)
  • 2 tablespoons olive oil
  • 1 can (16 ounces) baked beans
  • 1/3 cup your favorite BBQ sauce, Baked corn bread (8-inch square)
  • 1/2 cup canned french fried onions


Corn bread squares topped with sliced franks and beans in a zesty barbecue sauce.

  1. Cook bell pepper and onion in hot oil in large saucepan over medium heat 2 minutes, stirring frequently. Add beans, franks and barbecue sauce; mix well. Simmer 5 minutes, or until heated through, stirring occasionally.
  2. Cut corn bread into six pieces. Place one piece on each serving plate. Top evenly with the bean mixture. Sprinkle with French fried onions just before serving.
