Breakfast Skillet with Smoked Sausage

  • 1/2  of a 10-14oz package Eckrich® Smoked Sausage
  • 2 tablespoon Oil
  • 1/2 cup Chopped onion
  • 6 Small red potatoes, cut into 1/2-inch cubes (2 cups)
  • 10 Brussels sprouts, trimmed, halved
  • 1/4 cup Water
  • 2 cloves Fresh garlic, minced
  • 1 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • 1/4 teaspoon Crushed red pepper flakes, optional
  • 1 tablespoon Chopped parsley, optional
  • 4 Eggs


  1. Preheat oven to 350ºF.
  2. Slice Eckrich Smoked Sausage into thin coins; set aside.
  3. In a 10-inch oven-proof non-stick skillet, heat oil over medium heat. Add onion, potato, and Brussels sprouts; sauté for 5 minutes, stirring occasionally. Add water; cover and continue cooking 5 minutes
  4. Stir in sausage, garlic and seasoning; continue cooking uncovered 5 to 8 minutes or until vegetables are tender, stirring occasionally.
  5. Make four small wells on surface; carefully crack eggs into wells. Bake 10 minutes or until eggs are set. Sprinkle with parsley.

Tip: Substitute 1-10-oz. Package of Eckrich Beef Skinless Smoked Sausage or 1-13-oz. Package of Eckrich Turkey Skinless Smoked Sausage for the Smoked Sausage and enjoy another great flavor!
