Ingredients

  • MEAT
  • 2 cups Eckrich Deli Ham Off the Bone, sliced ½-inch thick and cubed
 
  • PRODUCE
  • Large handful onion, diced
  • Small handful cilantro, coarsely chopped
  • 2 cups frozen diced potatoes, thawed
  • 1 cup avocado salsa, refrigerated prepared
  • Jalapenos, thinly sliced for garnish (optional)
 
  • DAIRY
  • 3 large handfuls Mexican cheese, shredded
 
  • PANTRY
  • 8 soft corn tortillas

Preparation

  1. COOK: Onions and potatoes in large nonstick skillet until golden brown (12-15 minutes).
  2. ADD: Cubed ham and cook for 3-5 minutes.
  3. REMOVE: Mixture from skillet and put aside.
  4. IN SAME SKILLET: Warm tortillas over medium-high heat for 15 seconds per side.
  5. TOP: Warmed tortilla with cheese and ham mixture.
  6. SERVE: With salsa and cilantro for garnish, if desired.
  7. SAVE: Some of these tacos for tomorrow morning’s breakfast.
