Smoked Sausage Sandwich

  • 1 pound Eckrich® Skinless Smoked Sausage sliced in 4 pieces
  • 1 cup pinto refried beans
  • 2 avocados (or more to your liking)
  • 4 cheese slices of your preference (American, Cheddar)
  • 4 Mexican (French) rolls about 6 inches long
  • 1/2 cup sour cream (Mexican brand sour cream preferred)


Sliced smoked sausage is sauteed with onions and red and green bell pepper makes these dinner sandwiches the perfect way to cook a quick and colorful weeknight dinner.

  1. Heat the Eckrich Skinless Smoked sausage on dry skillet set over médium heat, for about 2- minutes.
  2. Heat the refried beans and set aside.
  3. Slice the avocados.
  4. Split rolls lengthwise, spread lightly both sides of the roll with sour cream.
  5. Spread the top side of the roll with avocado.
  6. Spread the bottom part of the roll with the refried beans.
  7. Put the sliced sausage on bottom half of the roll.
  8. Top with the sliced cheese and sliced avocado.
  9. Garnish with sliced pickled jalapeño peppers & pickled onions or salsa.
