Ingredients

  • 5 c Eckrich Smoked Sausage - slice into 2" slight bias cut pieces (approx 2 packages)
  • 1 pan of cubes bread torn and dried
  • 1.5 dozen Eggs
  • 3 c half n half
  • 8 oz Cheddar or American cheese - cubed
  • 5 c cheddar cheese
  • 2 T thyme - rough chopped
  • 2 T italian seasoning
  • 1 T Pepper, fresh ground
  • 3 T Parsley, rough chop 2 in 1 sprinkle on top
  • 10.5 oz container grape tomatoes - whole
  • 9 garlic cloves, split in half on top
  • 1 bag purple pearl onions - peeled and cut in half
  • 3/4 c grated parmesan cheese - sprinkle on top
  • Cooking spray

Preparation

Smoked sausage with cheese, and scrambled eggs blend beautifully for breakfast, brunch, or dinner.

  1. Take 2 loaves Italian loaf cut and tear into 2 inch pieces and allow to dry. This can be done day before.
  2. Combine eggs, half n half, italian seasoning
  3. Once mixture is totally combined add - Eckrich Smoked Sausage, shredded cheese, Cheddar or American cheese - cubed, grape tomatoes, parsley, thyme, and onions
  4. Spray casserole pan with cooking spray. Top with Parmesan Cheese, garlic, pepper, extra parsley, extra thyme, extra cheese
  5. Bake at 375 degrees for approximately 1 hour 15 mins or until cooked through
  6. Serves 12 using a 13x9x2.5 casserole dish
