Lemon Orzo Smoked Sausage Soup

  • 1 (10-14oz) package Eckrich® Smoked Sausage, cut into 1/4-inch thick slices
  • 2 cups diced onion
  • 1 teaspoon minced garlic
  • 2 tablespoons olive oil
  • 2 cups diced celery
  • 2 cups chopped carrots
  • 6 cups chicken stock
  • 3/4 cup uncooked orzo
  • 1 teaspoon chopped fresh rosemary
  • 1/4 cup fresh squeezed lemon juice (1 large lemon)
  • Chopped fresh Italian parsley, optional


  1. In 4-quart saucepan or stock pot, sauté onions and garlic in olive oil until onions are translucent. Stir in celery and carrots; sauté 5 minutes.
  2. Add chicken stock; bring to a boil over high heat. Stir in sliced sausage, orzo and rosemary. Reduce heat and simmer until orzo is tender, about 10 minutes, stirring occasionally.
  3. Stir in lemon juice; season with salt and pepper to taste. If desired, garnish with parsley before serving.
  • Dice the Eckrich Smoked Sausage for a different look
  • Add a can of garbanzo or white beans for additional protein
  • Add some small diced cauliflower or broccoli for extra veggies
  • Top with your favorite salad croutons before serving for some crunch
