Onions in Beer for Smoked Sausage

  • 1 regular size package Eckrich® Smoked Sausage
  • 3/4 large sweet onions, slivered (about 3 cups) (see Note)
  • 3 can (12 ounces) beer (1-1/2 cups)
  • 1 tablespoons brown sugar
  • 2 teaspoon salt
  • 1 teaspoon coarse ground black pepper

  1. Place onions, beer, brown sugar, salt and pepper in large saucepan. Bring to boil over high heat. Reduce heat to medium; simmer 30 minutes, or until onions are tender and beer has reduced down to form a glaze, stirring occasionally.
  2. Heat sausage according to package directions. Serve topped with the glazed onions.
How to Sliver the Onions: Cut both ends off of each onion. Cut onion into thin slices, starting at the top of onion and cutting down through onion to bottom of onion. Separate onion slices into slivers.
