Pan-Seared Smoked Sausage with Yellow Rice

Ingredients

  • 1 regular size package Eckrich® Smoked Sausage
  • 1 tablespoon vegetable oil
  • 1 package (8 ounce) Spanish-style yellow rice mix
  • 2-1/4 cups water
  • 1 cup green peas
  • 2 jarred roasted red peppers, chopped (about 1/3 cup)
  • ½ cup sliced stuffed green olives
  • 2 green onions, sliced
  • ¼ to ½ teaspoon crushed red pepper flakes

Preparation

Flavor abounds in a sizzling skillet of smoked sausage and yellow rice

  1. Cut sausage into ¾" thick slices.
  2. Heat oil in a 4-quart pan over medium heat.
  3. Cook sausage until browned, about 8 minutes.
  4. Stir in rice mix and water.
  5. Cover pan, bring to a boil. Reduce heat to a simmer; cook 20 minutes or until water is almost absorbed.
  6. Stir in peas, roasted red peppers, olives, onions and pepper flakes.
  7. Cover and cook until rice is tender, about 5 more minutes.
