Pesto & Roasted Pepper Beef Sandwich

  • 8 ounces thinly sliced Eckrich Deli® Roast Beef
  • 1/4 cup prepared basil pesto
  • 8 slices Italian bread (1/2-inch thick)
  • 4 thin slices mozzarella cheese
  • 1/2 cup sliced roasted red bell peppers
  • 1 cup torn romaine lettuce leaves
  • 1/4 cup mayonnaise


Deli roast beef, basil pesto, roasted peppers and mozzarella cheese make this sandwich a special treat.

  1. Spread 4 slices of bread with pesto. Layer each with 1/4 of the beef, cheese, peppers, and lettuce.
  2. Spread each remaining bread slice with mayonnaise. Place on top of sandwiches.
  3. Cut each sandwich in half.
