Rainbow Antipasto Pasta Salad

  • 1 6-ounce piece Eckrich Deli® Pepperoni, cut into 1/2-inch cubes
  • 3 cups (8 ounces) dri tri-color rotini pasta
  • 2 cups fresh broccoli florets
  • 1 6-ounce piece mozzarella cheese, cut into 1/2-inch cubes
  • 1 jar (6.5 to 7.5 oz.) marinated artichokes, drained
  • 1/4 cup chopped red onion
  • 3/4 cup balsamic vinaigrette or Italian salad dressing
  • Chopped fresh parsley or basil (if desired)


Easy to prepare pasta salad that features an array of colorful antipasto ingredients.

  1. Cook pasta according to package directions, adding broccoli during last 2 minutes of cooking. Drain and rinse with cold water.
  2. Place pasta, broccoli, pepperoni, cheese, artichokes, onion, and dressing in large bowl; toss to coat. Chill 30 minutes or until cold.
  3. Garnish with parsley or basil.
