Smoked Sausage Brunch Sandwich

  • 1 regular size Eckrich® Smoked Sausage, cut into 18 slices
  • 3 whole wheat English muffins, split, toasted
  • 2 eggs, separated
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon spicy brown mustard
  • 1/2 cup (2 ounces) shredded Cheddar cheese


English muffins topped with a soufflé-like egg mixture and sliced smoked sausage.

  1. Preheat oven to 350 degrees F. Arrange muffin halves, split sides up, in single layer in 13x9-inch baking dish; set aside.
  2. Beat egg whites in medium bowl with electric mixer on high speed until stiff peaks form; set aside. Beat egg yolks, parsley and mustard in small bowl with wire whisk until well blended. Add to egg whites; stir gently until well blended. Gently stir in cheese; spoon evenly onto muffin halves. Top each with 3 sausage slices.
  3. Bake 20 minutes, or until egg mixture is set.
