Fast and Fabulous Smoked Sausage Fajitas

  • 8 ounces (1/2 of regular size package) Eckrich® Smoked Sausage, halved lengthwise, cut into 1/2-inch-thick slices
  • 1 medium green bell pepper, cut into thin strips
  • 1 medium red bell pepper, cut into thin strips
  • 1 medium onion, cut into thin slices, separated into rings
  • 1 teaspoon dried oregano leaves
  • 1/2 teaspoon ground cumin
  • 1/8 teaspoon hot pepper sauce
  • 4 flour tortillas (8 inch)
  • Shredded lettuce (optional)
  • Salsa (optional)
  • Sour cream (optional)


Stir-fried smoked sausage, colorful bell peppers and onions wrapped in warmed flour tortillas.

  1. Combine sausage, bell peppers, onion, oregano, cumin and hot pepper sauce in medium skillet; cook over medium heat 8 minutes, or until vegetables are crisp-tender and sausage is heated through.
  2. Heat tortillas according to package directions.
  3. Spoon sausage mixture evenly down centers of tortillas. Top with lettuce, salsa and sour cream, if desired. Roll up.
