Smoked Sausage & Shrimp Gumbo

Ingredients

  • 1 (10-14oz) package Eckrich® Smoked Sausage, cut into 1/4-inch thick slices
  • 1 tablespoon oil
  • 3/4 cup chopped onion
  • 3/4 cup diced green bell pepper
  • 3/4 cup sliced celery
  • 1 teaspoon minced garlic
  • 6 cups water
  • 1 (7oz) package Zatarain’s Gumbo Mix with Rice
  • 1 lb. (26-30 count) raw shrimp, peeled and deveined

Preparation

  1. Heat oil in 4-quart saucepan over medium. Add vegetables and garlic; sauté 5 to 6 minutes until tender.
  2. Stir in smoked sausage; continue cooking 2 minutes.
  3. Add water and gumbo mix with rice; bring to a boil. Reduce heat, cover and simmer for 25 minutes until rice is tender.
  4. Stir in shrimp; continue cooking 3 to 4 minutes until shrimp are cooked.
