Smoked Sausage-Studded Red Beans and Rice

  • 1 regular size package Eckrich® Smoked Sausage, halved lengthwise, cut into 1/2 inch-thick slices
  • Cooking Spray
  • 1-1/3 cups long-grain white rice, uncooked
  • 1 medium onion, chopped (about 1/2 cup) 1 cup chopped celery
  • 2 cans (14.5 ounces each) seasoned chili beans, undrained
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 2 teaspoons Cajun seasoning blend


A one-dish recipe flavored with Cajun-seasoning, smoked sausage, diced tomatoes and chili beans.

  1. Cook rice according to package directions using 2-2/3 cups water.
  2. Spray large saucepan with cooking spray; heat over medium-high heat.
  3. Add sausage, onion and celery; cook 5 minutes, or until vegetables are crisp-tender, stirring frequently.
  4. Add beans, undrained tomatoes and the seasoning blend; mix well.
  5. Reduce heat to low; simmer 10 minutes, or until heated through. Stir in rice.
Great Substitute: Prepare as directed, substituting 1 teaspoon salt, 1/2 teaspoon chili powder and 1/2 teaspoon onion powder for the Cajun seasoning blend.
