Smoked Sausage Ole Appetizer

  • 1 regular size package Eckrich® Smoked Sausage, quartered lengthwise, cut into 1/4-inch-thick slices
  • 3/4 cup thick and chunky salsa
  • 1 can (16 ounces) Rosarita® No Fat Traditional Refried Beans
  • 1/4 cup fat free sour cream
  • 1 can (2.25 ounces) sliced ripe olives, drained
  • 6 green onions, sliced
  • 1 package (12 ounces) tortilla chips
  • 1 medium tomato, chopped (about 1 cup)


Smoked sausage, refried beans, olives, tomatoes and onions are layered in this appetizer dip.

  1. Cook and stir sausage 5 minutes in large skillet over medium heat until lightly browned; drain. Wipe skillet with paper towel. Return sausage to skillet; stir in salsa. Set aside.
  2. Mix beans and sour cream in medium bowl; spread onto large serving platter.
  3. Top with the sausage mixture, tomatoes, olives and onions. Serve with the tortilla chips.
