Ingredients

  • 1 (10-14oz) package Eckrich® Smoked Sausage 
  • 1 (20oz) package refrigerated hash browns
  • 6 large Portobello mushrooms, stems removed
  • 2 tablespoons olive oil
  • 1/2 cup (2oz) shredded Parmesan cheese
  • 2 tablespoons chopped fresh chives

Preparation

  1. Heat oven to 400ºF. Cook hash browns according to package directions until crisp and golden brown; season with salt and pepper.
  2. Place the mushrooms, top side down, on aluminum foil-lined baking sheet. Drizzle olive oil equally over mushrooms and season with salt.
  3. Evenly sprinkle cheese over each mushroom. Divide crispy hash browns into sixths and place on top of each mushroom.
  4. Slice smoked sausage in half lengthwise; cut each half into 1/2-inch thick slices. Arrange sausage slices on top of each mushroom.
  5. Bake at 400ºF. for 15 minutes until heated through. Garnish with chives before serving.
Tips:
  • Dice the Smoked Sausage and add to the hash browns for the last five minutes. Scoop the hash brown/sausage mixture into the mushrooms. Finish as directed
  • Prepare these great mushrooms without the hash browns for a high protein veggie meal
  • Garnish with basil, sundried tomatoes and a splash of balsamic vinaigrette
