Ingredients

  • 1 regular size package Eckrich® Smoked Sausage (10-14oz)
  • 2 teaspoons vegetable oil
  • 1 lb baby red potatoes, cut into wedges
  • 6 oz green bell pepper, julienne
  • 6 oz yellow onion, julienne
  • 8 Eggs
  • Salt and pepper to taste

Preparation

A hearty breakfast skillet made with eggs, Smoked Sausage, potatoes and veggies that will bring the whole family together.

  1. Cut sausage into ½-inch slices.
  2. Heat oil in a cast iron skillet over medium heat. Add potatoes, green bell pepper, yellow onion and sausage to skillet and stir until cooked through.
  3. Scramble eggs in a bowl and add to the skillet and place the skillet in a 350 degree oven until the eggs are cooked and slightly browned on top.
  4. Add salt and pepper to taste.
