Smoked Sausage Quesadillas

  • 1 regular size package Eckrich® Smoked Sausage, chopped
  • 8 (6 to 7-inch) flour tortillas
  • 1-1/2 cups grated Chihuahua or Monterey Jack cheese
  • 1 (4 ounce) can chopped green chilies, undrained
  • 1 cup salsa


Traditional quesadillas with a Naturally Hardwood Smoked Twist.

  1. Cook and stir sausage in a large nonstick skillet over medium heat until browned and heated through, 4 to 5 minutes. (Do not wash skillet.)
  2. Divide sausage evenly among tortillas; top with cheese and green chilies.
  3. Fold tortillas in half over filling.
  4. Add half of quesadillas to same skillet; cook over medium heat 2 to 3 minutes per side or until browned and cheese has melted.
  5. Repeat with remaining quesadillas; serve with salsa.
