Smoked Sausage Spinach Salad

  • 8 ounces (1/2 of regular size package) Eckrich® Smoked Sausage, halved lengthwise, cut into 1/4-inch-thick slices
  • 1 can (15 ounces) Great Northern beans, drained, rinsed
  • 1/2 cup plain yogurt
  • 1/4 cup honey mustard
  • 2 teaspoons maple-flavored syrup
  • 1 bag (6 ounces) baby spinach leaves
  • 1 large mango, peeled, chopped
  • 4 green onions, thinly sliced


Smoked sausage, beans, and spinach team up with mango for a great salad

  1. Cook and stir sausage in medium skillet over medium heat 5 minutes, or until lightly browned. Remove from heat. Stir in beans; set aside.
  2. Mix yogurt, mustard and syrup in small bowl until well blended; set aside.
  3. Divide spinach among 4 dinner plates; top evenly with the sausage mixture, mango and onions. Drizzle with the yogurt mixture just before serving.
