Southwest Smoked Sausage Skillet Supper

  • 1 1 regular size package Eckrich® Smoked Sausage Links, cut into 1-inch pieces
  • 1 tablespoon Vegetable Oil
  • 1 medium zucchini, halved lengthwise and sliced
  • 1 medium onion, chopped (1/2 cup)
  • 3 cups cooked rice
  • 1 can (14.5 ounces) Diced Tomatoes with Mild Green Chilies, undrained
  • 1 cup frozen whole kernel corn, thawed
  • 2 teaspoons Chili Powder
  • 1/2 teaspoon dried oregano leaves
  • 1/4 teaspoon salt
  • 1 cup (4 ounces) shredded Cheddar cheese


This one dish meal features smoked sausage, zucchini, tomatoes, rice and cheese.
  1. Heat oil in large skillet over medium heat. Add sausage, zucchini, and onion; cook and stir 8 minutes.
  2. Stir in rice, diced tomatoes (with juice), corn, chili powder, oregano, and salt. Simmer over low heat 10 minutes, stirring occasionally. Remove from heat.
  3. Top with cheese; cover. Let stand 5 minutes, or until cheese is melted. Serve immediately.
