Stir-Crazy Apple-Smoked Sausage Skillet

  • 1 regular size package Eckrich® Smoked Sausage, halved lengthwise, cut into 1/2-inch-thick slices
  • 1 cup long-grain white rice, uncooked
  • 1 medium green bell pepper, chopped (about 1/2 cup)
  • 1 medium onion, chopped (about 1/2 cup)
  • 2 Jonathan apples, quartered, cored and cut crosswise into 1/4-inch-thick slices
  • 1/2 cup chili sauce
  • 1/2 cup Knott's® Berry Farm Apple Jelly
  • 1 medium tomato, chopped (about 1 cup)


Apples team up with smoked sausage & vegetables to add flavor and texture to this stir-fry topper for rice.

  1. Cook rice according to package directions. Meanwhile, stir-fry sausage in large nonstick skillet over medium heat 5 minutes, or until lightly browned.
  2. Add bell pepper and onion; stir-fry an additional 2 minutes.
  3. Add apples, chili sauce and jelly. Cook and stir 4 minutes, or until apples are tender. Stir in tomato; cook 1 minute, or until mixture is heated through, stirring occasionally.
  4. Serve over rice.
