1 package Eckrich turkey smoked sausage
Yellow pepper, orange pepper – Cut into large 2-inch cube
1 yellow squash – cut lengthwise and slice ½ inch
1 zucchini cut lengthwise and slice ½ inch
1 red onion, 2-inch cube
1 pint cherry tomatoes
1 garlic clove, chopped
¼ cup chopped parsley
1 cup pre-made rice, cooked
2 tablespoons balsamic vinegar
1/3 cup olive oil
Rice per package instruction.
Garlic, olive oil, parsley and balsamic, divide in half.
Vegetables in oil mix.
On medium heat with smoked sausage for 10 minutes.
Other half of oil mixture to cooked rice.
Everything off grill.
Smoked sausage and serve over rice with parsley.
Additional balsamic if you like
Swap: bottled balsamic dressing for scratch oil mixture. Mushrooms for peppers. Asparagus for zucchini.
